Magus does not go along with shield as it hungers for actions. You will want sparkling targe for a shield build, as this ease your action pressure by focus spell. You are going to spellstrike less and rely on regular strikes with buffing spells when using a shield. Somatic in PF2e does not require an empty hand, so yes you can do that.
