Also you can make both katanas keen for the dex scaling and still use bloddy slash. Less bleed but more damage. Hoarfrost is my go to. Getting the Nagakiba is a better option for its reach. Dual wielding them is great with both bleed effect. As for ash of war I believe it's more preference.
